Born in Bolivia, Carlos Rivero grew up in the Mexican food business in San Antonio and originally learned the art of the kitchen from his mother. After moving to the capital city, he honed his restaurant skills at legendary Jeffrey’s of Austin before starting El Chile in 2003 with fellow Jeffrey’s alum Jeff Martinez. He has since been joined by Cordon Bleu-trained chef Alma Alcocer, as well as his sister, James Beard-nominated chef Maribel Rivero.
The entrepreneur’s philosophy shines through at each of his El Chile Group concepts, which all offer an uncompromising focus on gracious hospitality and gastronomic creativity. Having forged a team of culinary professionals, Rivero continues to explore innovation and opportunity in the diverse topography of Austin’s restaurant Renaissance.
